In canon, Buson trains two Pokemon that we know of:
Muk, whose only known attack is Sludge Bomb. Being sentient toxic sludge, a lot of physical attacks tend to just bounce off them in the anime (even attacks that would normally cut or do some damage just kind of... stretch Muk around or cause them to ooze and splatter, then... reform... )
It's useful for attacking from a distance and has a chance of poisoning targets with long range attacks like Sludge Bomb. In close quarters, its slow speed would make it rather bad at dodging. At best, it can absorb attacks or melt things.
Skarmory, who uses Sky Attack, Steel Wing, and Fury Attack. It's Buson's main battler and is very light and fast. It's useful for reconnaissance, close and medium range attacks.
A Skarmory's feathers are sharp blades, however, Skarmory are more delicate than they seem and their metallic feathers can become dented. They do, however, molt once a year and grow new ones. Skarmory naturally dislike getting wet, as they can rust.

farawayplace, after the canon update so he'd be post-Rayquaza mission in Hoenn, as we don't know what new Pokemon they might have caught there, but as Jessie and James and Butch and Cassidy also typically catch or recieve Pokemon native to the regions they travel to, I figured the same would be true of Bashou and Buson! So, Buson's additional Pokemon...
Mawile, with the ability Initimidate, who uses Play Rough, Torment, Sucker Punch, and Vice Grip.
Mawile is good at close range attacks, restraining enemies with its back jaws, and chewing through iron, which also makes it useful for escape.
Clackoon (Ultern's setting has the GS beta Pokemon populating its regional PokeDex, this is a tanuki Pokemon that didn't make it into GSC), who uses Flamethrower, but not very reliably or very well. He's slow-witted and slow-paced, plodding along and misinterpreting the simplest of instructions. Bashou once pointed at a firepit and told Clackoon to set it on fire. Clackoon stared directly at Bashou's hand and then proceeded to direct his flames at it, although Buson redirected his head towards the firepit in time to avoid serious damage, this didn't spare Clackoon from Bashou's anger.
Perhaps, with time, Clackoon will become more useful and less of a fire hazard and thus earn Bashou's civility as a useful creature, but for now... he's viewed with contempt by Bashou, Bashou's Pokemon, and even Buson's Mawile.
A gag Pokemon, effectively, but one Buson feels sorry for and fond of, even if he's no battler.
... eventually, Clackoon learns Pain Split and Belly Drum, which makes him useful as a sacrifice to bring down enemies, but it's a strategy that relies on him taking a lot of damage along with the enemy, so it won't be used often.

Roselia, with the ability Poison Point, raised for the Bashou in Ultern (Faraway Place.) It knows Toxic Spikes (which Steel and Poison types are immune to, so won't harm Steelix or Muk, and is ineffective against Flying types like Skarmory, even as it surrounds the battlefield), Giga Drain, and Aromatherapy. Raised primarily for a strong and soothing scent, so only drinks springwater, but also trained to be able to battle alongside their team.
